| Children will like making these vegetable cakes and they are yummy! |

We all know that we should be eating more vegetables and it’s a common problem for parents to get their children to eat more greens.
Â
Carrot Cake
Ingredients
- 2 cups of brown sugar
- 1 ½ cups of vegetable oil
- 4 eggs
- 2 cups of grated carrot
- 3 cups of sifted SR flour
- 2 tsp cinnamon
- 1 tsp ground ginger
- 1 cup walnuts (optional)
Method
Place all ingredients into a large bowl, using a wooden spoon mix very well.
Pour into 2x 22cm cake tins or muffins or 1 large 25 cm cake tin. Bake for 30 min at 170 degrees.
Hiding vegetables is a sneaky and challenging business, putting finely chopped zucchinis and carrots in pasta and cheese sauces is an old trick.

But did you ever think of hiding them in cakes?

And the best part is that the children will like making them.

I love using ingredients in different ways and cakes are no exception.

The recipes today have vegetables in cakes!!

Beetroot Chocolate Muffins
Ingredients
- 250 gm (1 large) cooked beetroot
- 3 eggs
- 200ml Vegetable oil
- 1 ½ cups SR flour
- ½ cup cocoa
- 1 cup castor sugar
Method
Place beetroot in a food processor and puree.
Add eggs and oil. Blend for another 10 seconds.
Sift flour cocoa and sugar, add to beetroot mixture and blend 5 seconds until just combined.
Place into paper lined muffin tins and bake for aprox 10 min at 180. Makes 24

We are used to carrot cake of course, but what about using beetroot and zucchini as well.

All of these cakes freeze well, so they can be cut and wrapped now ready for back to school.

Zucchini Cake
Ingredients
- 1 ¼ cups of brown sugar
- 1 cup of vegetable oil
- 3 eggs
- 3 cups (4 medium) zucchini
- 2 ½ cups SR flour
- 1 cup of chopped dates (or other fruit)
- 1 tsp mixed spice
Method
Beat together the sugar, eggs and oil until thick and pale.
Stir in the zucchini, flour, dates and spice.
Line 2x22cm square cake tins with paper and bake at 170 for 30-40 min.

Any of these recipes can be made healthier by:
- Substituting some of the sugar with honey
- Replacing some of the oil with yoghurt
- Replacing some of the white flour with wholemeal flour
For (optional) icing:Â
Mix 250 gm cream cheese with ½ cup icing sugar, 2 tsp orange rind and 1 tbsp orange juice and mix until smooth before spreading generously over cooled cake.
