Shayne Greenman, a Melbourne based master pastry chef has won the 2012 SIGEP BREAD CUP in Rimini, Italy.
His entry, a “Waltzing Matilda” styled bread centrepiece won this amazing accolade and has had an overwhelming response from the judges, receiving the highest points awarded ever in the history of the competition.
The SIGEP BREAD CUP is a championship dedicated to the entire artisan bread baking field and happened for the third time this year.
On the eve of Australia Day celebrations back at home, Shayne, who teaches at William Angliss Institute is overwhelmed by his incredible win in the chilly wintry seaside town on the east coast of Italy.
A professional and international jury selected him as the clear winner.
“I am just so proud to be an Australian baker competing and now winning at this level of competition. I am still coming to terms with it! I am so happy to have had the chance to compete and to be the world champion in bread making is quite overwhelming and very exciting. We do create world class work in Australia and here is the proof,” he says.
Teams from ten nations, with 40 contestants and a further 80 professionals and pupils supporting them competed in this years cup.
The Bread Cup is programmed under the theme of sustainability which will be exemplified by the use of renewable energies by means of new technologies favoring energy saving and therefore the use of renewable energy and materials useful for increasing artisan enterprises’ profitability.
Shayne is a multiple award-winning master of patisserie and acclaimed pastry chef, chocolatier and teacher. He has won many regional, national and international awards in an outstanding twenty-five year career. Shayne is also currently the gold medallist in the Australian Artisan Baking Cup.
In 2010, Shayne also won two gold medals Aquinas Australian Pastry Championships at the and in 2009.
“This is the pinnacle of world baking and to have won is my career highlight to date. I look forward to coming home and sharing the success with my colleagues, students, family and friends,” says Greenman.
The 33rd SIGEP, International Exhibition of Artisan Gelato, Pastry, Confectionery and Bakery Production, was held at Rimini Fiera from 21 to 25 January 2012. Over 19,676 visitors from 128 countries attended the event.
